Purple Creamer Potato Salad


The daughter and I went to Sunflower Farmer's Market yesterday to pick up a few things for the week. Whilst there, I picked up a bag of the purple creamer potatoes for potato salad. I do realize these are primarily for smashed taters but I thought I'd try them for salad. One of the only things I did different from my regular potato salad was to slightly undercooked them so that they wouldn't fall apart in the salad. I also added some steamed edamame (soy beans) to the salad for a slight difference in texture as well. I used the rest of the ingredients from my regular recipe of mayo, hard boiled eggs, chives, fresh ground pepper, chopped celery and a splash of lemon juice. It sure is pretty and as always yummier the next day.

It looks absolutely BEAUTIFUL on that plate!!!!
You're lucky to be where you can find these little gems. If you ever can find German Fingerling Potatoes, buy them for potato salad. Small, golden color, waxy, they are what the real German Potato Salad is made from. Distinct texture and taste. I used to grow them years ago.

Not sure we get the purple potatoes here... I love the Yukon golds..especially for mashed as they make you think theres lots of butter! lol!

Leslie, that is a beautiful potato salad. You kbow what? That's a great idea! Not the usual boring plain potato salad. I have to consider making this!

Anne, I also can get German fingerlings. We are lucky in that potatoes grow well here in CO and that the growers are looking back to our heritage for what they grow.

As to the plate, lucky find at a church auction, hand painted teacup, tea dish, two sizes of plates. Sadly broke the tea dish (dang those lovely ceramic tile floors), but have the other pieces to enjoy.
